There was a time when boating through the Chesapeake Bay was a struggle because of the number of oyster reefs in the water. There was also a time when people said you shouldn’t eat oysters in months that didn’t contain the letter “r.”
Neither is true today.
Aquaculture – or more simply oyster farming – has made oysters a year-round product in the bay. It also might be the solution to restoring the bay’s once booming oyster population, which is currently at less than 1 percent of its peak…
